The La Floresta (translates as The Forest) farm is located in the heart of the speciality coffee-growing region of Pitalito, Huila. The Yellow Colombia as a varietal are a natural mutation of red cherries. They draw in less heat from sunlight, offering slower maturation to allow for the sugars to develop further, which offers a more complex profile. The cherries are left to dry using the traditional Colombian process, which is an overnight dry fermentation, fully washed and left to dry for 15-25 days.
