Fermentation is a process that is not spoken about much in coffee processing, but as soon as picking begins, this is an issue requiring intricate control. Throughout the day heavy fermentation can occur in the fruit gathered in sacks sitting in the sun and if left too long it can lead to defects. The cherries from La Granja are fermented for 36 hours, fully washed and left to dry on raised beds for up to 15 days. This is a common requirement for a coffee at this altitude, due to the cooler climate.
